Going through my own health journey was a daily learning experience that included a lot of trial and error. Figuring out how to properly feed my body to achieve good health while managing restrictions that were necessary seemed daunting at first. But food choices became easier as I experimented and found what worked for me. Food is so much more than just sustenance. Food is the center of social gatherings, food brings joy and pleasure, and food brings comfort and so much more. So, I tried to still enjoy all these things about food as my regimen transitioned to one that was healthier for my body and the autoimmune diseases that I manage. Making the changes I did definitely made a positive impact on my health and improved my quality of life. Along the way I found some great resources that I would like to share with you here. These resources are my favorite cookbooks that I go back to time and time again. I hope you find them helpful on your own journey to optimum health and healing!

What I love about this cookbook is that recipes can be made gluten free or dairy free (or both) and are based on a paleo eating method. There is a key in the beginning pages of the book that lists pictures and what each picture means. These pictures then show up on each recipe page as a guide to know if the recipe is gluten free or dairy free or both or even recipes that are free of the nightshade family of vegetables. Such a great resource and there hasn’t been a recipe I have tried that I haven’t liked! The slow cooker thai beef stew on pg.160 is one of my favorites!

This cookbook is an incredible resource! Part 1 of the book explains the paleo approach to eating, explanation of how to stock your pantry, how to store foods, cooking tools, meal plans and shopping lists. The recipes are split up in to breakfast foods, appetizers, salads, & snacks, and then on to soups and stews and main meals by types of protein. Pork Pie-Stuffed Acorn Squash on pg 231 is absolutely delicious and is a hearty meal I tend to crave in the fall and winter months!

I picked this cookbook up because I love the slow cooker (or crock-pot as it is called by many) and I wanted an option for quick and easy when time was limited on busy days. I really like how you can throw all the ingredients in the slow cooker and your meal is slowly prepared all day while you are at work or tending to your day. Once you get home it is like magic, your meal is ready to eat! Although there is a bit of prep work up front, it is so worth it when you walk in the door and dinner is ready! A bonus: the clean-up is easy! One of my favorites from this cookbook is the Herbed Chicken with Lemon on pg. 138…yum!
